Abstract:
Fish consumption is influenced by many factors such as socioeconomic background, education level [1], age [2] [3], religion and cultural traditions [4], but lately, consumers are very preoccupied about the health involvement [5], food safety and fish quality [6], being even willing to pay a higher price for quality products [7]. Consumers want to have access to all the information needed (product name, provenience, etc.) in order to be informed of the buying decision about fish and fishery products, but, in most cases, this information do not exist or are too scarce. In order to reduce the perceived risk associated with food consumption, many countries have introduced the Food Traceability System, which provides all relevant information about the food process, “from the farm to the table”
